Pleasant Pheasant Dishes
A deliciously warming winter meal that is traditional and very rustic.
Ingredients
4 Large Pheasant Breasts 4 Slices Pancetta 4 bay leaves Freshly ground black pepper 2 Large Green Peppers, sliced lengthways Olive Oil
Method
Preheat oven to 230 degrees C, and season the breasts with the pepper. Wrap in the pancetta, tucking in a bay leaf.
Prepare
the peppers, brushing them over with a little oil, and then pour some
oil into a roasting tin. Place the wrapped breasts in the tin together
with the peppers and bake near the top of the oven. If you place the
peppers skin side up, the skin will brown nicely and the pancetta
should be nice and crisp. We wouldn't advocate more than about 20 mins
in a hot oven,keeping a check after 15 mins - pheasant breasts are not
as large as chicken breasts but should be cooked thoroughly.
We
suggest serving with a vegetable in a sauce, such as leeks in white
sauce or courgettes in a tomato and oregano bake. MMMMmmm!
